Salad with Grilled Goat Cheese, Apples and Walnuts

Grill the toast
Arrange slices of goat cheese on toasted bread. Pop them under a hot grill for a moment until golden. Keep a close eye on them, as they can burn very quickly.
Toast the walnuts and apple
In a dry pan, toast the chopped walnuts, then after a minute or two add half an apple, peeled and cut into small cubes.
Whisk the dressing
Whisk about two teaspoons of vinegar with salt, beating until the salt has dissolved. Then add pepper, honey and about two tablespoons of olive oil. Whisk again until you get a smooth, well-blended dressing.
Serve
Toss your choice of salad greens (I used lamb's lettuce and rocket) with the walnuts and apple, drizzle with the dressing, and top with the goat cheese toast, which you can cut into small cubes if you like.
