Roast Wild Boar Leg on Celeriac with Chocolate Sauce

  1. Prepare the onion and celeriac

    Sauté the onion and celeriac together in a pan on the hob with a little oil until nicely golden. Then tip them into the roasting dish you'll use to cook the meat. I used a large cast-iron roasting pan with a lid.

  2. Roast it

    In the same pan, sear the whole wild boar leg, seasoned with salt and pepper on all sides, until browned. Add the seared leg to the roasting dish with the celeriac and onion, add the rosemary, cover with the lid and roast in an oven preheated to 120 °C until the meat is tender.

  3. Roasting time

    The roasting time depends on the size of your wild boar leg, but you should expect it to take several hours.

  4. The sauce

    Remove the tender wild boar leg from the roasting dish. Transfer the onion and celeriac to a blender, add the cream and blend until smooth. Break the chocolate into pieces and let it melt into the hot sauce. You can simmer it together for a few more minutes if you like.

  5. Serving

    Serve with whatever you fancy. We chose tarhonya, as it's become one of our favourite side dishes lately.
