Plum, Cinnamon and Poppy Seed Lívance (Czech Pancakes)
·Cook the plums
Halve the plums, remove the stones, and cut into smaller pieces. Put them in a saucepan, add about 1 dl of water, the cinnamon, and roughly 4 tablespoons of cane sugar. You can always sweeten the plum compote further later on. Cover with a lid and let it simmer at just above medium heat.
Make the batter
Mix the eggs with the melted butter and milk, and whisk together. In a separate bowl, combine the flour with salt, baking powder, and sugar. Stir into the liquid mixture and whisk until you have a smooth, lump-free batter.
Fry the lívance
Fry the pancakes. This amount of batter should make about twenty lívance.
Check on the plums
While frying the pancakes, keep checking on the plums in the saucepan and stir occasionally. If the compote looks too runny, turn up the heat and let the excess liquid boil off. Adjust the sweetness with a bit more sugar if needed.
Serve
Spoon the plum compote over the lívance, top with a dollop of sour cream, and sprinkle with poppy seeds. For an extra treat, drizzle with melted chocolate.
