Not Just for St. Nicholas: Haribo Bear Loaf (or Cake)
·Whip up a stiff meringue
Put the egg whites into a stand mixer bowl fitted with the whisk attachment and beat until stiff. Add a pinch of salt and icing sugar, then whisk again. While the meringue is whipping, melt the butter and let it cool slightly.
Fold in the bears
Into the sweetened meringue, add the flour and melted butter alternately, a little at a time, folding gently after each addition so the meringue doesn't lose too much volume. Finely chop the fruit, Haribo bears, chocolate and nuts, then fold them into the batter, little by little.
Pour into the moulds
Rinse silicone bear-shaped moulds with cold water, then pour in the batter. Bake in an oven preheated to 160°C for 25 minutes.
Add the glaze
Turn the cakes out, let them cool, then drizzle with the glaze. To make it, simply melt the chocolate together with the butter in a water bath (double boiler). Once both are melted and combined into a smooth glaze, stir in 2 tablespoons of milk.
Chill in the fridge
Glaze the bears straight away and let the glaze set – in the fridge is best.
