Apple Bundt Cake with Coconut Oil

  1. Grate the apples

    First, preheat the oven to 160°C. Peel the apples and grate them coarsely. Immediately toss them with the juice of one lemon so they don't turn brown.

  2. Cream the base

    Beat the butter with the sugar until fluffy. Add the eggs one at a time, along with the cream. Keep beating until you get a smooth mixture.

  3. Mix the dry ingredients

    In a second bowl, combine all the dry ingredients – flour, baking powder, baking soda and the spices.

  4. Pour into the tin

    Pour the batter into a greased and floured bundt tin and bake for about 60–80 minutes, depending on the type of tin.

  5. Skewer test

    The cake is done once a skewer inserted into the centre comes out dry, or with just a few crumbs sticking to it. It mustn't come out coated in wet batter.

  6. Turn out and dust with sugar

    Turn the cake out straight away and let it cool. Dust lightly with sugar, and it's ready to enjoy.
