Honey Cake Balls - Last-Minute Christmas Cookies

  1. Making the flat cakes

    Mix the flour with the baking soda. Add the remaining dough ingredients. Work into a firm, non-sticky dough. Shape it into flat cakes - they don't need to look pretty at all.

  2. Baking

    Bake in an oven preheated to 180°C for about 15 minutes. Let cool completely.

  3. Making the filling

    Let the butter soften, then mix it with the caramelised condensed milk.

  4. Blitzing into crumbs

    Break up the cooled flat cakes and blitz them finely in a food processor. Set some crumbs aside for coating the balls.

  5. Making the mixture

    Mix the filling with the crumbs and work into a mixture for shaping into balls. Chill it in the fridge for two hours - this will make the balls much easier to shape.

  6. Shaping

    Shaping

    Shape the mixture into balls and roll them in the reserved crumbs to coat.
