Homemade Almond Granola Bars

  1. Prep the baking tray

    Prep the baking tray

    Preheat your oven to 180°C (fan/convection). Spread the oats and chopped nuts onto a large baking tray. The nuts should be roughly chopped, a mix of coarse and fine pieces.

  2. Bake

    On the tray, mix the nuts together with the oats and bake for 15 minutes in the middle of the oven.

  3. Add the butter and blend the dates

    Add the butter and blend the dates

    Mix the honey with the peanut butter and pop it in the oven for a moment alongside the oats and nuts. This will warm the mixture and help it melt together. Blend the dates into a sticky paste.

  4. Mix everything together

    In a bowl, combine all the prepared ingredients. This creates the mixture for your bars.

  5. Transfer to a tin and smooth down

    Transfer to a tin and smooth down

    Line a shallow tin, roughly 23 x 30 cm, with cling film. Spread the mixture into it and smooth down the surface.

  6. Chill, then slice

    Chill, then slice

    Place in the fridge for at least an hour to firm up. Then cut into pieces about the size of store-bought granola bars, or into small squares.

  7. Storage

    Store in an airtight container or in the fridge.

  8. You're done!
