Grissini – Homemade Italian Breadsticks
·In a stand mixer fitted with a dough hook, combine all the dry ingredients, then slowly pour in the water and oil. Mix until the dough is smooth and elastic.
Cover the dough and let it rise for 1.5–2 hours.
Line baking sheets with parchment paper and preheat the oven to 220°C.
Divide the dough into 4 pieces, roll each one out and cut into strips. Twist and stretch the strips — basically roll them out — to the length of the baking sheet.
Lay the breadsticks side by side, leaving a little space between them since they'll rise slightly more.
Before baking, brush them with a mixture of water and olive oil (a kitchen spray bottle works well if you have one) and sprinkle with salt. Bake until golden, about 20–25 minutes.
Serve them plain, or wrap each one in a slice of ham. They're also delicious dipped in homemade chili jam.
