Goose Breast on Apples with Potato Loksha Pancakes

  1. Prepare the ingredients

    Peel the apples and cut them into slices. Peel the onion and slice into half-rounds. Put the onion and apples into a roasting pan.

  2. Prepare the meat

    Season the meat with salt, caraway seeds and a little pepper, then place it in the roasting pan on top of the onion and apples. Add a splash of water and roast at 160°C until the meat is cooked through. Roast covered, then uncover for the last part of cooking and increase the temperature.

  3. Cook the potatoes

    Boil the potatoes in their skins the day before. Peel the potatoes and grate them finely, then add plain flour (you can replace half with wholemeal flour) and season lightly with salt.

  4. Make the dough

    Work the mixture into a dough, adjusting the amount of flour as needed, then roll it out into thin pancakes about 2–3 mm thick.

  5. Fry the pancakes

    Dry-fry the pancakes in a pan over medium heat for about 3 minutes on each side.

  6. Serve

    Fill the potato loksha pancakes with the sliced or shredded meat and apples, and serve with braised red cabbage.

  7. You're done!
