Fresh Pea Soup with Sour Cream

Sauté the onion
In a pot, sauté the finely chopped onion in a knob of butter. Just lightly, so it stays pale and doesn't brown.
Cook the soup
Add the peas and pour in the stock. Stir everything together and season with pepper and nutmeg. Simmer for another 10 minutes — no longer, so the soup keeps its lovely colour. Then stir in the sour cream and simmer for one more minute.
Blend and strain
Blend the finished soup until creamy. Then pass it through a sieve, since blending alone won't get rid of the pea skins.
Serve
Serve garnished with fresh herbs and, if you like, some crunchy soup pearls on top.
