Fluffy Chocolate Brownies - Cakey Style

  1. Prepare the pan and oven

    Preheat the oven to 175°C. Line a 23x23 cm baking pan with parchment paper, leaving some overhang on the sides to make it easier to lift the dessert out later.

  2. Mix the wet base

    In a bowl, combine the melted butter, sugar, vanilla, and coffee. Beat everything together until well combined, scraping down the sides of the bowl with a spatula as needed.

  3. Add the cocoa and leavening agents

    Add the cocoa, baking powder, and salt to the mixture. Whisk thoroughly on medium speed to make sure the batter is completely free of lumps.

  4. Incorporate the eggs and milk

    Gradually beat the eggs into the base. Finally, pour in the milk and whisk until smooth. This is what gives the batter its lovely airiness.

  5. Fold in the flour

    Turn the mixer down to the lowest setting. Add the flour and fold it in very gently. Be careful not to overmix the batter.

  6. Bake the brownies

    Pour the batter into the prepared pan and spread it evenly to the edges with a spatula. Bake for about 30 to 35 minutes. Let it cool completely before slicing.
