Cheddar and Chilli Bites
·Preheat your oven to 185°C. Take the butter out of the fridge.
In a bowl, combine the dry ingredients (flour, sugar, salt, black pepper, chilli, baking powder).
Coarsely grate the cheddar and stir it into the dry ingredients.
Add the room-temperature butter, cut into small pieces, and rub it in with your fingers. You should end up with a crumbly mixture, similar to a streusel topping.
In a separate bowl, mix the egg with the buttermilk and whisk lightly together.
Pour the liquid mixture into the bowl with the dry mixture and stir well with a wooden spoon until everything comes together. The dough will have a sticky consistency.
Line a baking tray with parchment paper and use two teaspoons to drop small mounds of dough onto it.
Before baking, sprinkle the bites with chilli or freshly ground pepper.
Bake for about 15–20 minutes at 185°C, until golden. Serve warm if possible, as that's when the cheddar aroma really comes through.
