Caramelized Peach Ice Cream
· 4 servings
Peel the peaches
Score the skin of the peaches lightly with a cross-shaped cut, place them in a pot or bowl and pour over boiling water. After a few minutes, remove them, let cool, then peel off the skins.
Make the caramel
Melt the sugar in a pan. Once it turns into an amber-brown caramel, add the peaches and let them stew for a little while. It's fine if a few bits of caramel don't fully dissolve. Let cool.
Blend and add the milk
Blend the peaches together with the caramel juices into a smooth purée, then stir in the condensed milk.
Whip the cream
Whip the cream and fold it into the peach mixture.
Ice cream maker or freezer
Pour everything into your ice cream machine and switch it on. If you don't have an ice cream maker, transfer the mixture to a bowl, place it in the freezer, and stir every hour.
