Beef Chunks Braised in Coconut Milk

  1. Sear the meat

    Heat coconut fat in a large non-stick skillet. Add the beef chunks, seasoned with salt and pepper, and sear on all sides.

  2. Add ginger, garlic, and starch

    Add finely grated ginger and garlic, and stir well. Sprinkle in two tablespoons of starch and mix again.

  3. Add the leek and braise

    Add the white parts of the leek, cut into small pieces or half-rounds, to the pan. Stir, pour in enough water to just cover the meat, cover with a lid, and braise gently over low heat.

  4. Pour in the coconut milk

    Check occasionally. Once the water has almost evaporated, pour in the coconut milk. Keep braising over low heat, adding a little more water if needed. There should still be a bit of light sauce left with the meat.

  5. Add the green leek and serve

    Once the meat is tender, add the chopped green parts of the leek, keeping a bit aside for garnish. Serve the meat with rice, garnished with leek strips.

  6. You're done!
