Baked Pears with Maple Syrup and Plain Skyr
·Slice the pears
Cut the pears lengthwise into slices. Use two pats of butter to grease the baking dish — I used a round cake tin. Arrange the pear slices over the buttered base.
Topping and maple syrup
Drizzle the pears with maple syrup, sprinkle with coconut sugar, and scatter over the chopped pecans.
Bake
All set? Preheat the oven to 180°C and get started on the granola — everything will go into the oven together.
Mix the granola ingredients
In a bowl, mix the oats with maple syrup, coconut sugar, coconut and butter. Add the chopped nuts too. Feel free to sneak in a few pieces of chocolate.
Bake
Spoon the mixture into small baking dishes, topping each with an extra pat of butter if you like. Now pop everything into the oven. Bake both the cake tin and the granola dishes for the same amount of time — 30 minutes.
Serving
Serve together with skyr. Spoon the skyr into a bowl, top with the baked pears and the buttery syrup they released while baking, and place the crunchy baked granola alongside.
