Apple, Spinach and Caramelized Onion Quesadilla

  1. Caramelized onion is the foundation

    Sauté the sliced onion in butter. Add salt, thyme, sugar and a splash of brandy. Stirring occasionally, let the onion slowly caramelize until golden. The aroma is out of this world!

  2. Filling the tortilla

    Preheat the oven to 200°C. Place the tortilla on a baking sheet lined with parchment paper. On one half, layer the grated cheese, fresh spinach, apple slices, the cooked onion and chopped pecans. Sprinkle a little more cheese over everything.

  3. Fold it up and get ready to bake

    Carefully fold the tortilla in half and brush the top with melted butter. This will make it beautifully crispy and golden once baked. This small trick makes a big difference!

  4. Time to bake!

    Put the quesadilla in the oven and bake for about 8-10 minutes. Keep an eye on it - you're aiming for a gorgeous golden surface and perfectly melted cheese inside. Every oven bakes a little differently.

  5. Serve right away

    Take the finished quesadilla out of the oven, let it rest for a minute, then cut it into triangles. It's best served hot, while the cheese is still nice and stretchy. Enjoy!
