Wonderful Homemade Elderflower Syrup

  1. Prepare the elderflowers

    Boil the water and let it cool. Add the elderflowers, which you should have left spread out on the table or floor for a while beforehand, so any little bugs or insects can crawl out.

  2. Prepare the lemons

    Wash the lemons very thoroughly under hot water and slice them. Remove the pips.

  3. Leave to steep

    Put the elderflowers, citric acid, and lemon slices into the boiled and cooled water. Leave the whole mixture to stand in a cool place for 24 hours.

  4. Strain and stir in the sugar

    Strain the mixture, ideally through a cloth, then stir the sugar into the elderflower water. Keep stirring until the sugar has fully dissolved. We don't recommend heating the mixture, so that the syrup retains as many beneficial compounds as possible.

  5. Storage

    Pour the finished syrup into bottles and store in a cool place. If you like, you can seal the bottles tightly and preserve them by heat-processing, which will help the syrup keep for longer.

  6. You're done!
