Pulled Smoked Pork with Beans and Tomatoes

·
4 servings
  1. Soak the beans ahead

Soak the beans the day before cooking. The next day, drain, rinse, and put them on to cook. Simmer until tender, season with salt near the end, then cook for a few more minutes. Drain, rinse under cold water, and set aside until the smoked meat is ready.

  2. Cook the meat

Put the meat on to cook at the same time as the beans and simmer until tender. Cooking time will depend on the cut of smoked meat you chose. Once tender, pull the meat off the bones and save the broth to use as a soup.

  3. Make the tomato-bean mixture

Heat the oil in a pot and sauté the finely chopped onion until golden. Add the canned tomatoes and season with salt, pepper, and thyme. Simmer together for five minutes.

  4. Combine everything

Add the beans to warm through. Finally, mix in the pieces of pulled smoked meat. Season with your chosen chili or hot sauce to taste. Serve immediately, ideally with fresh bread, or just as it is.

  5. You're done!
