Marinated Spicy Olomouc Cheese – Not Just a Beer Snack for the Guys

  1. Layer it up

    Get a clean, dry, sealable jar ready. Layer in the tvarůžky rounds alternately with onion half-rounds, sliced garlic, sun-dried tomatoes, and sliced chilli peppers, seeds included.

  2. Herbs

    Sprinkle with pepper and add bay leaves. If fresh herbs are in season, feel free to add your favourites too – a bit of lovage, rosemary or thyme all work brilliantly.

  3. Tomato oil and sunflower oil

    Pour over the jar first with the oil the sun-dried tomatoes were stored in, then top up with sunflower oil. Use enough oil to make sure everything in the jar is fully submerged.

  4. Maturing time

    Seal the prepared tvarůžky and leave them to mature in a cool place for at least a week, ideally two to three. If you leave them somewhere less cold than the fridge, like a pantry, they'll mature faster. Check them regularly until they're beautifully soft.

  5. Tip:

    You can also add optional extras to the jar to suit your taste – pickled chilli peppers, olives, capers, pieces of fresh colourful pepper, or juniper berries.

  6. Tip: flavouring the cheese

    You can also marinate the tvarůžky in beer instead of oil – a good quality dark beer works best. Before marinating, you can also coat the cheese in hot or sweet paprika.
