Beef Chunks Braised in Coconut Milk
·Heat coconut oil in a large non-stick pan. Add the beef chunks, seasoned with salt and pepper, and sear on all sides.
Add the finely grated ginger and garlic, and stir. Sprinkle in two tablespoons of cornstarch and mix again.
Add the white parts of the leek, cut into small pieces or half-rounds, to the pan. Stir, then pour in enough water to cover the meat. Cover with a lid and braise over low heat.
Check on it occasionally. Once the water has nearly evaporated, pour the coconut milk over the meat. Continue braising over low heat, adding more water if needed. There should be a bit of delicate sauce left with the meat.
Once the meat is tender, add the sliced green parts of the leek, saving a little for garnish. Serve the meat with rice, garnished with strips of leek.
