Cozy Spelt Waffles
·Toast the oats
Spread the oats on a baking tray lined with parchment paper and toast in the oven at 170°C for 15 minutes. This gives them a richer, slightly nutty flavor. As they bake, they'll release a lovely aroma and turn a bit darker.
Make the batter base
Take the oats out of the oven and let them cool slightly. Tip them into a blender and blend into a fine flour. Mix the oat flour together with the spelt flour, then add the baking powder, sugar, and salt, stirring well. Add the remaining wet ingredients.
A thick batter
Mix everything together with a large whisk until you get a thick batter. I found mine a bit too thick, so I added a splash more oat milk to loosen it up.
Rest for 30 minutes, then cook
Let the batter rest for half an hour. I often leave it longer — even overnight in the fridge if I want fresh waffles in the morning. Pour the batter into a waffle maker and cook until golden brown. Serve with whatever toppings you love and are in the mood for.
