Chocolate Mousse
·Heat the cream together with the dark chocolate to 45–50 °C, stirring thoroughly until smooth.
Pour the chocolate mixture into a clean bowl and let it cool to around 40 °C.
Gently fold the whipped cream into the cooled chocolate mixture, a little at a time. Stir carefully so the mousse stays light and airy.
Divide the finished chocolate mousse into glasses and chill in the fridge.
Decorate the chocolate mousse however you like.
