Banana Roof with Bebe Biscuits
·Make the curd cheese cream
Tip the curd cheese into a bowl and mix in sugar to taste along with the vanilla extract. Line a baking tray with foil.
Arrange the biscuits
Lay the bebe biscuits out on the foil. Arrange three in a row, on their side — you'll have two left over. Alternate them dark, light, dark and so on.
Spread on the cream
Spread half of the cream over the biscuits. This part is a bit of a nightmare — the biscuits will slide around everywhere, so just be patient…
Add the second layer, reversed
Arrange a second row of biscuits on top of the cream, in the opposite order to the first row — light biscuit over dark, and dark over light.
Spread on more cream and add the banana
Spread over the remaining half of the cream. This layer is easier to work with, as the biscuits are now stuck to the cream underneath and won't slide around as much. Place a peeled banana down the middle.
Carefully fold into a roof shape
Now shape it into a roof: gently lift the sides up along the banana and press them together against it.
Pour over the chocolate
Melt the chocolate with the butter in a saucepan — no need for a water bath. Pour this mixture over the roof. Chill in the fridge, ideally until the next day.
